In our house, I’m the only one who enjoys mornings. I can be up and ready to eat in 30 minutes. The rest of my crew, not so much. They like to be up and moving for an hour or two before eating. I love that we can all enjoy a warm meal, even if it’s at different times. It’s also great to-go!

One of the added bonuses to this slow cooker breakfast is that your house will smell amazing when you wake up. It definitely makes getting out of bed slightly easier. It’s healthy, too!

In order for this recipe to turn out with the given cooking times, do not substitute any other type of oats for the steel cut. Also make sure to use a liner in your slow cooker or heavily grease the sides of the crock. If you don’t, the oats will stick!

Slow Cooker Apple-Cinnamon Oats

Ingredients:

1 cup steel cut oats
3 cups water
1 cup fresh apple cider
2 medium apples, cored and diced
1½ tablespoons honey, preferably local
1 teaspoon ground cinnamon   
½ teaspoon ground nutmeg
½ teaspoon ground allspice
½ teaspoon salt, to taste

To serve:

1 medium apple, cored and diced
½ cup pecans, chopped
Real maple syrup

Instructions:

Add oats, water, cider, apples, honey, cinnamon, nutmeg, allspice, and salt to greased or lined slow cooker crock and stir to combine.

Cover and cook on low for 6-8 hours. Actual cooking time will vary depending on your slow cooker, so check for doneness after 5 hours and adjust cooking time accordingly.

To serve, allow to cool slightly before spooning into bowls and topping with fresh chopped apples, pecans, and some real maple syrup, if desired.
