Banana Pudding Popsicles are going to sweeten up your summer!

Through the early 1990’s, I spent every summer enjoying an assortment of popsicles at my grandparents’ house. Most of them were pudding pops! Unfortunately, they soon were discontinued until 2004 and I “out-grew” them. Fast forward to today, and I love to indulge on a box during the summer.

As temperatures start to rise, I wanted to bring back a bit of my childhood to my own kids before they’re grown and out on their own. I discovered a silicone popsicle mold and decided to turn one of my favorite flavors into a delicious homemade summer dessert. In addition to pudding pops, you can make a large assortment of frozen treats from juice, fruit, ice cream, jam, and more!

To ensure that you get the best popsicles possible, put a piece of clear wrap over the mold before putting the sticks in. Cut small holes in it where you will insert the sticks. I like to let mine freeze for about an hour then put the sticks in. It helps them stay straighter – especially if you’re using the wooden sticks.

Storing popsicles is as easy as leaving them in the mold. But if you need it to buy more, remove the popsicles and place in an air-tight freezer bag or container. If you want to store them longer than a couple of days, individually wrap with clear wrap before placing in the bag/container.

What you’ll need to make Banana Pudding Popsicles:

  • 2 ½ cups of instant banana pudding (I make the 5.1 oz. box and measure out the 2½ cups)
  • 1 cup of frozen sliced banana
  • ½ cup of vanilla wafer crumbles
  • Silicone popsicle mold
  • Half sheet pan
  • Non-stick baking mat

How to Make Banana Pudding Popsicles:

Slice and freeze your bananas. I line a half-sheet with a non-stick mat and spread out the slices. Once they are solid, place one to two slices in each popsicle mold.

Fill the molds half-full with the pudding. Use a spoon to push the pudding down around the banana slices.

Place one to two more banana slices in each mold.

Finish filling the molds with pudding. Top them with cookie crumbles, gently pressing down.

Place the lid of the mold on top and insert popsicle sticks.

Put the mold in the freezer for at least six to eight hours.

Ingredients

Instructions
