Celebrations can’t shouldn’t happen without cake. I’m even on board with meetings (especially at work!) not happening without cake. Hey, a gal can dream can’t she?

One of my biggest tips when it comes to baking a great cake is to always carefully and completely read through the recipe. Assemble all of the ingredients and utensils you will be using, pre-heat your oven, and prep your pans. Your butter, eggs, and milk should all be at room temperature when you start making the cake. I promise, this makes a huge difference!

For this particular recipe, I used standard cake pans. I highly recommend these 9-inch standard, non-stick, and quick-release pans. If you use a pan that is larger, your cake will be pale, flat, and shrunken. Baked in a pan that is too small, it will bulge over and you won’t have consistently-shaped layers to build your cake.

Shiny pans are preferred because they reflect the heat away, resulting in a light brown, tender crust. Fill your pans at no more than half full. To precisely measure for even layers, fill your pan with water. Measure how much it holds then half that for the amount of batter you will add to the pan.

To prepare your pans, grease the bottom and sides generously with shortening. Do not use butter, margarine, or oil as substitutes. Dust each pan with flour, shaking the pan until the bottom and sides are well-coated. Shake out any excess flour into the trash.

Once your cake has baked, allow it time to fully-cool before attempting to frost. It will be quite a mess if you don’t! If you use a buttercream frosting on this cake, store lightly (but fully) covered up to 3 days. If you want to make this cake ahead of time, freeze by placing in a sturdy container and wrapping with clear wrap then aluminum. When stored properly, a cake can be frozen for up to 6 months.

To thaw, let the wrapped frozen cake stand at room temperature for an hour if unfrosted.

Ingredients to Make a Classic White Layer Cake and Buttercream Frosting:

  • Non-stick cooking spray
  • Unsalted butter
  • Vegetable shortening
  • Granulated sugar
  • Egg whites
  • Real vanilla extract
  • All-purpose flour
  • Baking powder
  • Salt
  • Whole milk
  • Powdered sugar

How to Make the Classic White Layer Cake:

Place top oven rack in center position and pre-heat oven to 350°F. Prepare two 8-inch round cake pans by spraying with non-stick cooking spray and lining the bottom with a parchment paper round. Set aside.

Cream butter, shortening and sugar in a large mixing bowl. Add in the egg whites and vanilla, and mix until smooth.

In a separate large bowl, combine the flour, baking powder, and salt. Slowly add the dry ingredients to the wet and mix to combine. Add in the milk and continue mixing until smooth.

Divide the cake batter evenly between the prepared baking pans and place in the pre-heated oven for 30-35 minutes, or until a toothpick inserted in the middle comes out clean. Remove from oven and let cool completely.

To frost the cake, first level the top of each cake layer by carefully slicing the rounded portion of the cake off. (A cake leveler works great for this). Put the leveled side down on a cake plate. Add a thin layer of the Buttercream Frosting to the exposed top side.

Add the second cake layer, again with the leveled top side down. Add the remaining frosting to the top of the cake, slowly working it around from the middle of the cake top to the edges. Scrape some of the frosting over the edges and apply a thin layer of frosting to the sides of the cake.

Slice and serve immediately. Enjoy!

How to Make Buttercream Frosting:

Cream the butter in a large mixing bowl with a hand-mixer until perfectly smooth.

Sift in the powdered sugar and continue mixing until smooth.

Add the vanilla and mix to combine.

Slowly add in the milk, one tablespoon at a time, while mixing until reaching the desired consistency.

Frost your cake and enjoy!
