Cream Cheese Berry Pancakes Recipe

Cream cheese berry pancakes are perfect for breakfast or dinner!

In the age of information, we are constantly bombarded by opinions of experts. One of the biggest controversial topics is whether or not we should be eating breakfast every morning.

Personally, I believe that we should all listen to our own bodies and physicians. In our house, I’m the only “morning” person. From the moment my feet hit the floor, I’m talking and excited to start the day. The rest of my family — not so much. They could easily become extras on the set of The Walking Dead.

I love the energy boost I get by eating breakfast in the morning. When I choose to skip, I’m reaching for junk food by break time. My husband used to say that eating soon after waking up would make him sick; but after getting him in the habit of eating breakfast, it’s become a daily habit. The added benefit of energy and elimination of mid-morning cravings was enough to convince him!

Now my family requests to have breakfast for dinner at least two to three times per month. These pancakes are one of the top requests!

Cream Cheese Berry Pancakes without Powdered Sugar or Monk Fruit

Cream Cheese Berry Pancakes with Powdered Monk Fruit or Sugar

Directions

  1. Add cream cheese, eggs, cinnamon, and vanilla extract to a high-powered blender. Cover and blend on high until completely smooth.

  2. Heat a cast iron griddle or large skillet over medium heat. Once hot, add ½ tablespoon olive oil to griddle and spread around with a rubber spatula.

  3. Pour 3 small pancakes onto the griddle (approximately 2-3 tablespoons each), leaving enough space in between so they don’t run together. Cook until the edges just begin to turn brown and the pancakes are set, approximately 3-4 minutes.

  4. Carefully flip each pancake and continue cooking for another 1-2 minutes or just until golden brown on the bottom. Transfer cooked pancakes to a platter and keep warm. Repeat this process with remaining olive oil until all batter is cooked.

  5.  To serve, divide the pancakes among individual serving plates and top with fresh berries, a sprinkle of powdered sugar or monk fruit, if desired, and some real maple syrup. Enjoy!

  • 8 ounce cream cheese, softened and cut into cubes
  • 6 large eggs
  • ½ teaspoon ground cinnamon
  • 1 teaspoon real vanilla extract
  • 3 tablespoons extra virgin olive oil, divided
  • 1 cup fresh blueberries
  • 1 cup fresh strawberries, sliced
  • 2 tablespoons powdered sugar or monk fruit (optional)
  • Real maple syrup, to serve

Instructions
