When it’s hot outside, cooking and heating up the house is one of the last things I want to do. Many opt for cold cereal or sandwiches, but my family isn’t a big fan of either one. We do love a cold Dill Cucumber Salad though!
I like to prep this recipe in the morning and let the flavors develop for a more flavorful dinner. This dish can be used as a main entree or a side dish. It pairs nicely with grilled chicken. You can even marinate the chicken along with the vegetables.
If you have a garden, picking fresh vegetables for your salad is such a blessing! If not, stop by your local farmer’s market or roadside stand to pick up veggies for the freshest flavor.

Dressing Ingredients:
Greek Yogurt
Sour Cream
Fresh Lemon Juice
Fresh Dill
Garlic Powder
Salt and Black Pepper
Salad Ingredients:
Cucumbers
Red Onion
Fresh Dill
Instructions:
Prepare the dressing by whisking all of the ingredients together in a medium bowl until thoroughly combined. Taste and adjust seasonings as desired. Set aside.
Add the cucumber, red onion, and roughly chopped fresh dill to a large bowl. Pour the dressing on top and toss to combine. Serve immediately or chill for up to two hours before serving. Enjoy!
