Grilled Tequila Lime Cod – Sitka Salmon Shares

A few months ago, I had the opportunity to work with Sitka Salmon Shares and brought you two tasty recipes. For the month of April, I received a Sitka Salmon Shares Premium box which features Wild Alaskan Pacific Cod and a large piece of Wild Alaskan Coho Salmon.

Pacific Cod, also known simply as “Cod”, is a smart choice for seafood because it is sustainably managed and responsibly harvested under U.S. regulations. Often known as “gray” cod, this fish is brownish gray with dark spots or patterns on their sides with a paler belly. They have a long chin barbell, or whisker, similar to that of a catfish.

Cod have a lifespan of up to 20 years and can grow up to 6-foot in length. Females begin to reproduce at about 4-5 years and spawn from January to May. The females can produce 1 million+ eggs every spawn! These fish school together and feed on clams, worms, crabs, shrimp, and juvenile fish.

The mild flavor of cod is very attractive for those who aren’t fond of the “fishy” taste. It has a delicate texture that is flavorful, nutritious, and loaded with lean protein, vitamins, and minerals. They are a big lower in omega-3s than fatty fish, but still good for a healthy diet. It also contains less mercury than some seafood, including tuna.

It is recommended that men, women, and children eat 4+ servings per month. We like to enjoy at least one meal containing fish per week. You could even make it a theme night such as Fish Friday! This Grilled Tequila Lime Cod is the perfect recipe to try out for your new flavorful night!

Grilled Tequila Lime Cod Ingredients:

½ tablespoon of oil
3 tablespoons Tequila
1 tablespoon Triple Sec
3 teaspoons ground cumin
2 teaspoons minced garlic
1 teaspoon cilantro
½ teaspoon chili powder or ancho chili pepper
¼ teaspoon ground cayenne
Juice of 1 lime
Salt, to taste
Pepper, to taste
4 pieces of cod, 6-8 ounces each
1 tablespoon oil, for cooking
2 limes, wedged or sliced, for serving

Cilantro Lime Drizzle Ingredients:

¼ cup sour cream
1-2 tablespoons Tequila
2 teaspoons finely chopped fresh cilantro
¼ teaspoon ground cumin
Juice of 1 lime
Salt, to taste
Pepper, to taste

How to Make Grilled Tequila Lime Cod:

In a small bowl, whisk together the oil, Tequila, Triple Sec, cumin, garlic, cilantro, chili powder/ancho chili pepper, cayenne, and lime juice.

Gently pat your fish dry with a paper towel. Season with salt and pepper.

Place the fish in a 9″ x 13″ baking pan. Pour the marinade over the pieces of fish, turning to fully-coat each piece. Cover with clear wrap and place in the refrigerator. Allow to marinate for up to 30 minutes.

In a small bowl, combine all of the drizzle ingredients and whisk well. Cover and place in the refrigerator.

Add one tablespoon of oil to a stovetop grill pan. Allow to warm over medium-low heat.

Grill your fish for approximately 2-3 minutes per side, until white and cooked through. The fish will easily flake when it is done.

Place the fish on a serving plate and drizzle with your cilantro-lime drizzle.

Add fresh cilantro (if desired) and lime slices/wedges for serving.
