Instant Pot Macaroni and Cheese is easy and tasty!

One of the most frequently-requested side dishes in our house is mac and cheese. Using the Instant Pot to make it is truly a game-changer for dinner. It’s quick, easy, and only requires cleaning up the liner of the IP.

Making mac and cheese from scratch has always been my traditional method for this comfort dish. I believed that the only way to make delicious mac and cheese was by creating a roux. I will still use this for my baked mac and cheese, but when I’m making our weekly dinner, this recipe is the way to go!

Other recipes call for evaporated milk but I highly recommend using whole milk. It makes your dish creamier and more fulfilling. The hot sauce is not included to make the recipe “spicy”. I use it because of the added level of flavor. The cheeses can also be changed up if you have a preference of different types. Make it uniquely yours!

Ingredients and Tools to Make Instant Pot Macaroni and Cheese:

  • Elbow noodles – any shape you like will work!
  • Water or Chicken Broth
  • Whole Milk
  • Butter
  • Sharp cheddar cheese
  • Mozzarella cheese
  • Fontina Cheese
  • Hot Sauce
  • Ground Mustard
  • Paprika
  • Garlic Powder
  • Salt and Pepper
  • Instant Pot

How to Make Instant Pot Macaroni and Cheese:

Pour your elbow noodles into the Instant Pot liner. Pour in your water or chicken broth and stir, making sure that all of the noodles are submerged in the liquid.

Twist and lock the lid in place. Be sure your seal is tightly in place.

Set the vent to sealing and press “Pressure Cook”. Depending on your Instant Pot model, this may also be “Manual”. Using the “+” or “-“, change the time to 4 minutes.

It will take 5 to 10 minutes for the Instant Pot to come to pressure. It will beep and begin cooking.

Once the Instant Pot timer beeps, release the pressure and carefully remove the lid.

If there is water/broth remaining in the pot, carefully strain the noodles.

Return the noodles to the pot and stir in the milk, butter, and hot sauce, until melted.

Add the selections of shredded cheese and stir until melted.

As you stir, add your seasonings, mixing well.

Serve immediately. Feel free to sprinkle a bit of parsley on top, if desired.

Notes

Any of your favorite cheeses can be used to suit your personal taste preference.

The hot sauce does not make this recipe "spicy". It adds a deeper depth of flavor.
