A Little Soft, A Little Crisp – The Best of Both Worlds!

A pumpkin cake, by itself, is delicious. But imagine if you combine one with an apple crisp. Now you have DELICIOUS! The soft, fluffy cake is a good base for a layer of diced apples topped with oats. This dish can be made ahead of time to enjoy for an easy breakfast or snack. To me, it’s best warm; however, it is still flavorful at room temp.

You can leave out the Jack Daniel’s Whiskey if you’re not a fan. Or if you prefer a different brand, try it out, too! I have tried this with Tennessee Fire and Tennessee Apple to accent different flavors. They’re all amazing.

Ingredients to Make Jack Daniel’s Whiskey Apple Pumpkin Oat Cake:

  • Butter
  • All-Purpose Flour
  • Baking Soda
  • Pure Pumpkin Puree
  • Heavy Cream
  • Canola Oil
  • Granulated Sugar
  • Brown Sugar
  • Eggs
  • Vanilla Extract
  • Pumpkin Pie Spice
  • Apples
  • Ground Cinnamon
  • Rolled Oats
  • Jack Daniel’s Whiskey (I used the Tennessee Fire for an added cinnamon flair — but you can use your favorite!)

How to Make Jack Daniel’s Whiskey Apple Pumpkin Oat Cake:

Preheat your oven to 350°F. Spray the bottom and sides of a 9 x 9 baking dish with cooking spray.

To Make the Pumpkin Cake Layer:

Whisk the flour, baking soda, and salt together in a large bowl.

Add the pumpkin puree, heavy cream, canola oil, granulated sugar, brown sugar, eggs, vanilla, pumpkin pie spice, and whiskey to the bowl. Whisk to combine until fully incorporated.

Pour the batter into the prepared pan, using a silicone spatula to scrape the edges of the bowl.

To Make the Apple Layer:

Toss the apples with brown sugar, cinnamon, salt, and whiskey. You can use the same bowl that you whipped up the pumpkin cake mix.

To Make the Topping:

Still using the same bowl, combine the melted butter, flour, brown sugar, cinnamon, and pumpkin pie spice. Once in a crumbly form, spread the topping evenly over the top of the apples.

Place the baking dish on a baking sheet and slide into the oven. Bake for approximately 60 minutes (this will vary by oven). The dish is ready to remove from the oven when the cake is slightly rounded up and the edges are set. The dish will be bubbling.

If using a toothpick to check the doneness, it should be moist with crumbs but not wet.

Cool for a few minutes before serving warm. It tastes great when accompanied by a scoop of vanilla ice cream!
