Curious about how a breakfast casserole can change up your morning? Evaluating our daily vegetable servings led me to reevaluate how I could include veggies with our breakfast. A casserole is the quickest and easiest way for me to get breakfast on the table each morning. My bunch loves casseroles because most of them are topped with cheese. Anything is better when topped by cheese, right?!

My husband is up and out the door for work by 4:00 a.m., so I needed a casserole that could easily be reheated when my boys wake up for breakfast closer to 6:00 a.m. My family isn’t big on breakfast but I feel it’s an important way to start the day. They’re more “brunch” eaters.

If you don’t have potatoes on hand, you can swap them out with hash browns or tater tots. Feel free to change it up with your choice of cheese and vegetables. I had Brussels sprouts on hand and even they made for a delicious casserole!

Ingredients:

Non-stick cooking spray
Italian sausage (no casings)
Small red onion
Large russet or Idaho potato
Large eggs
Whole milk
Fresh broccoli, diced
Sharp cheddar cheese, shredded, divided
Fresh chives, finely chopped
Sea salt and black pepper

Instructions:

Preheat oven to 350°F and spray an 8 x 8-inch baking dish with some non-stick cooking spray.

Set a large skillet over medium heat and add the sausage. Cook until slightly browned, breaking up the sausage with a wooden spoon as it cooks, approximately 3-4 minutes.

Add the onion and potato and season with salt and black pepper, to taste. Cook, stirring occasionally, until the onion softens and the potatoes become golden brown, approximately 6-7 minutes.

In the meantime, whisk the eggs and whole milk in a small bowl and season with salt and black pepper, to taste. Add one-half cup cheddar cheese and stir to combine.

Transfer the sausage-potato mixture into the prepared baking dish and stir in the diced broccoli. Spread into an even layer and pour the egg mixture evenly over the top. Sprinkle remaining cheese across the top.

Place in the pre-heated oven and bake until the eggs are set and the potatoes are cooked through, around 30-35 minutes.

Remove from oven and cool for several minutes before slicing. Top with fresh chives and serve immediately. Enjoy!
