Roasted Italian Sausages with White Beans

Italian Sausages are hearty and bursting with flavor that are complemented well by white beans and cherry tomatoes. Everything is easily cooked in one cast iron skillet in the oven.

One Pan, Italian Sausages, and White Beans Make a Delicious Dinner!

If you’re a regular reader, you know that cooking in cast iron is one of my absolute favorite methods in the kitchen. I also love one-dish meals. This dish accomplishes both of these!

Italian Sausages are made by stuffing casings with seasoned ground pork. The distinct flavor comes from the use of red pepper flakes and fennel seed. It is often confused with smoked sausage, but the key difference comes in needing to cook the Italian to 160°F. They need to be cooked at a steady temperature to ensure that the sausage is cooked through and through.

One of my readers recently asked how to keep the sausages from curling. Before cooking, use your hands to gently roll them out into a straight link. Be gentle with this process so that you don’t break the casing. The casing is what helps keep the juices inside for that extra burst of flavor! You can also use skewers pushed through the length.

Any type of white beans – Navy, Great Northern, Cannellini, Lima – will work for this recipe. It all comes down to a matter of preference. I personally prefer the Great Northern white beans. They have a mild, nutty flavor, and stay a little firmer than the others. All of the flavors from whatever they are cooked with will be absorbed inside.

Ingredients to Make Roasted Italian Sausages with Tomatoes and White Beans:

  • Extra virgin olive oil
  • Italian sausages
  • Red onion
  • Garlic cloves
  • Cherry or grape tomatoes
  • Italian seasoning
  • Sea salt and black pepper
  • White beans
  • Red wine vinegar
  • Fresh basil

How to Make Roasted Italian Sausages with Tomatoes and White Beans:

Place the top oven rack in the center position and pre-heat the oven to 400ºF. Place a large cast iron skillet inside to warm up while the oven pre-heats.

Carefully remove the hot skillet from the oven and add the olive oil. Gently swirl the oil around the bottom of skillet until coated. Arrange the sausages, red onion, garlic cloves, and tomatoes in the skillet. Season with the Italian seasoning and a generous amount of salt and black pepper, to taste.

Place the skillet in the oven and roast for 20-25 minutes.

Remove from oven and add the white beans and red wine vinegar to the skillet and gently stir to combine. Be sure to flip the sausages so the bottom has a chance to brown evenly.

Return to the oven and cook for another 10-15 minutes or until the sausages are nicely browned.

Remove the skillet from the oven and remove the whole garlic cloves. Squeeze the roasted garlic into the skillet and top with the fresh basil. Stir to combine and serve immediately. Enjoy!

  • 2 Tablespoons extra virgin olive oil
  • 4 large Italian sausages (approximately 1 lbs.)
  • ½ medium red onion, sliced into wedges
  • 5-6 large garlic cloves, whole and unpeeled
  • 2 cups cherry or grape tomatoes
  • 1 Tablespoon Italian seasoning
  • Sea salt and black pepper, to taste
  • 1 15-oz. can white beans, rinsed and drained
  • 2 Tablespoons red wine vinegar
  • 3 Tablespoons fresh basil, thinly sliced

Instructions
