Slow Cooker Pulled Pork Lettuce Wraps

Slow cooker pulled pork lettuce wraps are a tasty, melt-in-your mouth dish that is also low-carb!

Slow Cooker Pulled Pork Lettuce Wraps

In less than 10 minutes, you can toss everything into your slow cooker and let it do the heavy lifting for supper. This nearly effortless meal will have your family asking for it again soon. For even tastier results, let your pork marinate in it’s own juices after shredding. It will soak up all of that tasty flavor!

This can also be made in your Instant Pot! I love to use a larger pork shoulder and make extra to either freeze or use in another recipe the following day.

Ingredients & Tools You’ll Need:

Slow Cooker Directions:

Warm two tablespoons of oil in a cast iron skillet. Sear each side of your pork shoulder until golden brown. Allow to rest for a few minutes.

Combine all spices and the cocoa in a small bowl and season with salt and black pepper, to taste. Rub the spice mix all over the pork shoulder and transfer to a 5 or 6-quart slow cooker crock. Add the chicken broth to the crock and cook on high for 4 hours or on low for 6.

Once the cooking time is complete, use two forks to pull the pork apart while it is still in the slow cooker crock. Allow the pulled pork to remain in the juices with the slow cooker set to “warm” for 20-30 minutes to absorb more flavor.  

To serve, fill each lettuce leaf with some crunchy broccoli slaw and top with some pulled pork. Enjoy!

Instant Pot Directions:

Set your Instant Pot to SAUTE mode and add 2 tablespoons of olive oil to the pot. Sear your pork shoulder until golden brown. Press cancel.

Add 1 cup of beef broth to the Instant Pot. Using a wooden spoon, scrape the stuck on bits from the bottom.

Season your pork shoulder and place in the pot.

Using the MANUAL setting, choose high pressure for 40 minutes.

Once the timer ends, allow the pot to naturally release for an additional 10 minutes before manually releasing.

Shred your pork shoulder and return to the pot. I like to use the SLOW COOK mode for about 15 minutes using a glass lid so that the shoulder can absorb more flavor from the juices.

Remove the pork, fill your lettuce leaves, top with the slaw and enjoy!

  • 2 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 teaspoon dried rosemary
  • 2 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper
  • 1 teaspoon ground fennel seeds
  • 2 teaspoons cocoa powder
  • Sea salt and black pepper, to taste
  • 1/3 cup chicken broth
  • 8 iceberg or butter lettuce leaves

Instructions

Warm the 2 tablespoons of olive oil in a cast iron skillet over medium heat. Sear all sides of your pork shoulder until a golden brown. Set aside and allow to rest for a few minutes.

    We love pulled pork sandwiches with NC vinegar based sauce, I guess it would be good on lettuce, too.

    • Yum! Vinegar-based sauces have a special place in my heart (and stomach!). For low-car/keto diet followers, the lettuce is a great substitute. But this can easily be put on a bun, too!
