National Donut Day means free donuts – right? Well, it does but there is a much greater meaning behind the excuse for shops to hand out freebies. The official holiday began in 1938 as a fundraiser for the Great Depression by the Salvation Army. It quickly spread as a way to boost morale among the injured during WWI as well as with Red Cross volunteers.
I enjoy making special treats for my family and one of their latest favorites is my Pink Lemonade Donuts. We all love a balance between sweet and tart so I made the donuts sweeter while the glaze is tart! Check out my easy recipe and over 100 from some of the best bloggers!
Pink Lemonade Donuts
Try a sweet and tangy treat for National Donut Day!

- Zest of 2 Large Lemons
- 4 tbsp Butter (softened)
- 2 tbsp Brown Sugar
- 1/4 cup Sugar
- 1 Egg (large)
- 3/4 tsp Baking Powder
- 1/8 tsp Baking Soda
- 1/4 tsp Salt
- 1/2 tsp Vanilla
- 2 tbsp Coconut Oil (or Veg. or Canola)
- 1/2 cup Milk
- 1 1/3 cups Flour
- 3/4 cup Powdered Sugar
- 3-4 tbsp Lemon Juice
Preheat oven to 425-degrees F.
In a small bowl, mix the sugar, brown sugar, and lemon zest together. Set aside.
In a large mixing bowl, mix butter until light and fluffy.
Add egg and oil; mix thoroughly.
Mix in sugar/lemon zest mixture and mix well.
Using a spatula, mix in baking soda and powder.
Alternating, mix in milk and flour until just blended. Do not over-mix.
Put mix in a piping bag and pipe into a pre-greased donut pan.
Bake approximately 8 minutes or until golden brown.
Let the donuts cool completely before glazing.
Whisk powdered sugar and lemon juice together to form a slightly runny glaze mixture.
Drizzle over the donuts and enjoy!
