Whiskey Cream Cheese Frosted Banana Bars

Whiskey Cream Cheese Frosted Banana Bars are the sweetest way to enjoy a bunch of overripe bananas! They can be made with or without the whiskey – either way, they’re amazing!

When I discover that our bananas are overripe and have time to bake something, my heart is filled with joy. There’s not too many banana-themed recipes that I haven’t tried. I’m not a big fan of wasting food and try to use them up in any tasty way that I can!

Whiskey Cream Cheese Topped Banana Bars

When bananas are overripe, they become even sweeter of a treat! Overripe bananas offer higher doses of Vitamin C and antioxidants. They may not look a-peeling (see what I did there??) but they sure are delicious!

Isn’t this basically banana bread?

No. Banana bread is more dense than these banana bars. The bread is typically suitable for slicing and toasting.

Can I freeze these?

If you want to make these ahead of time, I recommend leaving the cream cheese frosting off. Frost them once you are ready to serve. Wrap the bars in a double layer of clear wrap and then a tight layer of foil. Place in a freezer bag and store up to 3 months. To thaw, unwrap and bring to warm temp for at least 3 to 4 hours on a wire rack. Frost and serve!

How to Create Whiskey Cream Cheese Frosted Banana Bars:

Ingredients:

Banana Bars:

  • ½ cup butter, room temperature
  • 2 cups sugar
  • 3 eggs
  • 2 cups of mashed, overripe bananas (approximately 4 medium bananas)
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons of whiskey, optional (our preference is Jack Daniel Whiskey, of course!)
  • 2 cups + 1 tablespoon all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

Whiskey Cream Cheese Frosting:

  • ½ cup butter
  • 8 ounces cream cheese, room temperature
  • 4 cups + 2 tablespoons powdered sugar
  • Pinch of salt
  • 2 teaspoons vanilla
  • 1-2 tablespoons whiskey, optional

How to Make Whiskey Cream Cheese Banana Bars:

Preheat your oven to 350° F.

Grease a half sheet baking sheet (17.25″ x 12.25″ x 1″) and set aside.

Whisk the flour, baking soda, and salt together in a large bowl. Set aside.

Using a stand mixer, cream the softened butter and sugar together until creamy. Use a spatula to scrape the sides of the bowl to ensure a smooth blend.

Add eggs to the sugar mixture one at a time, mixing well after each one.

Add vanilla and mix well.

Using a spatula, fold in the mashed bananas until fully-incorporated.

Carefully fold in the dry mix with the wet mix. Do not over-mix.

Pour the batter into the greased half sheet pan and spread out evenly.

Bake for approximately 25 minutes or until a toothpick inserted in the center comes out clean.

Allow to completely cool before frosting.

To make the frosting, melt the ½ cup of butter. You can brown the butter if you’d like for additional flavor.

In your stand mixer, cream the butter into the cream cheese until smooth.

Gradually add in the powdered sugar, incorporating well each time.

Add the vanilla, whiskey (if using), and pinch of salt. Mix well one final time.

Spread the frosting over the cooled bars.

Cut, serve, and enjoy!

These can be kept in an airtight container at room temperature for up to three days.
